Update: tried hand-sawing beef shanks instead of the band saw and the cuts came out way cleaner
Last week our band saw blade was dull and I had 6 shanks to break down for a stew order, so I grabbed the 22 inch hand saw just to get through it. The band saw was smearing the marrow and leaving a rough edge, but the hand saw gave me clean faces with almost no bone dust on the meat. Took me about 4 extra minutes per shank but I barely had to trim anything after, so it honestly evened out. Anyone else keep a hand saw around for smaller bone work, or am I just overdue for a new blade?
