Wasted $150 on a fancy boning knife that chipped on the second deer
Bought a high-end German boning knife from a place in Portland last fall. By the second deer it had a chip in the blade right near the tip. Tried to sharpen it out but it just kept getting worse. Has anyone else had bad luck with those super hard stainless steels on game animals?

Did you debone that deer while it was still warm?

My buddy Mike from back home tried that once with a big 8 point buck he shot near Greentown. He stripped down to a t-shirt in 20 degree weather, said the heat made it easier to separate the shoulder from the ribs without any knife slippage. Took him about 45 minutes start to finish, but he said the smell was something else. @kai602, I guess it depends if you want that extra juiciness or if you'd rather keep your hands clean.
