Hot take: I stuck with my old hand-cut dovetails for years before trying a jig.
The jig got them done in 20 minutes flat, but the hand-cut ones from my first shop in Spokane just feel different. Anyone else have a method they know is slower but can't give up?

Yeah, I get that. I still hand-plane my table tops even though my drum sander is right there.

Oh man, that reminds me of my buddy who builds guitars. He has this insane, like, three hour process to bind the edges by hand with a heat gun and old clamps. There's a machine that would do it perfect in minutes. He tried it once and said the binding looked "too dead," like it had no soul. Now he just blocks off a whole afternoon for it every time, says the slow way lets him feel the wood give in a little.
