Spotting so many laminate floors in recent remodels takes me back to my early carpet days.
I remember when every job meant hours with a knee kicker, not just rolling out underlayment.

Haven't we all seen dry subfloors warp without any moisture?

My buddy learned the hard way about skipping moisture checks. He laid laminate over what looked like a dry subfloor. A few months later, boards started popping up everywhere. The repair bill was huge, and he had to redo the whole room. Now he always uses a meter like @andrew693 mentioned. Why would anyone risk it when the fix is so simple?
