My bean and rice week went better than I expected

Last Wednesday I decided to try that whole 'beans and rice for a week' thing everyone praises, and honestly I thought it would be boring. But I used canned black beans, some cheap frozen peppers, and a jar of salsa I had in the fridge, and every meal actually tasted different and good. Has anyone else found a way to make super cheap staples not feel like punishment?

The first thing I'd ask - what kind of salsa did you use? I've found that a chunky tomatillo salsa versus a smooth tomato one completely changes the texture and flavor of beans and rice. Also, were you heating the beans separately from the peppers or mixing everything in one pan? Those small differences add up a lot more than people give them credit for.

The salsa really does make a difference. Used a jar of store brand roasted tomato salsa and it gave everything a nice smoky kick. Would heat the beans and peppers together in one pan with some cumin and garlic powder, then throw the rice in at the end. That single pan method saved me on dishes too, which was a nice bonus.
