Shoutout to the lady at the checkout who asked why I buy whole chicken instead of thighs
I spent 3 years buying boneless thighs for $4.29 a pound before she pointed out whole chickens are 99 cents a pound and I just needed a knife.

Started breaking down whole chickens a couple years back when I realized I was basically paying for bones I could use for stock. Now I got this weird ritual where I save every carcass in a freezer bag and whenever it gets full I make a huge pot of broth that lasts me weeks. My neighbor thought I was running a small scale butcher shop out of my garage when she saw me with the cleaver. Yeah it takes like 10 minutes extra but I can get three meals out of one bird easy. Plus the stock makes my rice taste way better than anything from a box.

Wait didn't I read somewhere that the reason whole chickens are so cheap is because the stores actually lose money on them but they make it back on the thighs and breasts? Something about loss leaders in the grocery game. Anyway yeah its wild how easy it is once you learn where the joints are. I remember watching a youtube video once and the guy just popped the legs off like they were legos. Felt like an idiot for all those years of paying markup on pre-cut meat.
