The week my $20 grocery haul fed me for 5 days straight

Last fall I had a rough week where I only had $20 for food until payday. I grabbed a 5-pound bag of potatoes for $3, a dozen eggs for $2, and a big bag of frozen mixed veggies for $4 from Aldi. Made potato veggie hash with eggs every day and it actually tasted good, not like a punishment. Has anyone else stretched a tiny budget further than they thought possible?

The real trick here isn't just the ingredients, it's how much you can stretch by embracing one-pot cooking. Nobody talks about how much time and energy you save when every meal means washing exactly one pan instead of a whole setup. That mental relief is worth almost as much as the cheap food itself.
