My roommate in Cleveland told me my chili was "flat and sad," so I started doing one thing different
I made chili every Sunday for like two years and always thought it was pretty good, but my roommate finally just came out and said it tasted "flat and sad" and needed acid, not more salt. I was kinda hurt at first but he was right, I was dumping in salt and cumin and wondering why it never got that bright taste I wanted. Now I squeeze in half a lime and a splash of the pickle jar juice right at the end, and it's crazy how much better a $9 pot of chili tastes. Anyone else have a cheap trick like that for waking up bland food?
Thought I was just supposed to keep adding spices when my soup came out dull too. Then a buddy told me to hit it with a little vinegar or lemon at the end instead of more salt, and it was like a light switch. Now I keep a jar of pickled jalapeno juice in the fridge and a squeeze of that or lime goes in almost everything I cook. It sounds weird but that acid really does wake up a pot of beans or stew in a way salt never could for me.
