Appreciation post: my knife bag used to be a disaster until I got a magnetic strip for my station
For years I just tossed my knives in a roll bag and dealt with it, dull edges and scratched handles every single service. Last Tuesday I finally mounted a cheap magnetic strip right on my station at the restaurant in Fort Wayne, and the difference is night and day. Before, I was losing 10 minutes every shift hunting for my paring knife under a pile of towels and tickets. Now every blade is right there, I can grab my 8 inch chef knife without even looking, and I wipe it down and slap it back in one motion. My old roll bag weighed like 6 pounds and the zipper finally died, which is what pushed me to try the strip in the first place. I did have to teach the dish guys not to hang wet pans on it, but that took one conversation. Honestly my wrists feel better too because I'm not digging around a cramped bag anymore. Anyone else switch from a roll bag to a wall setup, and did you mount it at eye level or lower?
