Found out I was over-saucing plates for over a year

I was working a busy Saturday night at Luca's in Austin and a veteran line cook just watched me plate a pasta dish. He goes 'dude, you're drowning that in sauce, stop trying to hide the noodles.' I realized I was using about half a ladle extra cause I thought it looked hearty. Turned out the chef's standard was way less oil and sauce, more about the pasta texture itself. Anyone else have a kitchen habit they never questioned until someone called it out?

That's not a sauce, that's a blanket" is my new favorite cooking insult, gonna use it on my roommate.

lol "drowning it in sauce" - that hit home for me. I had a similar wake up call at a brunch spot I worked at in college. I was putting like a mountain of hollandaise on eggs benedict because I thought it made the plate look more generous. One slow morning the head chef just watched me plate one and goes "that's not a sauce, that's a blanket." I felt stupid for not seeing it sooner. It's funny how we all develop these little habits that probably come from trying too hard to impress people or something. But hey, I still sneak a little extra sauce on my own pasta at home, no one's judging me there.
