Found out my butcher was 20 degrees off all week
Checked my walk-in with a cheap probe thermometer and it read 42 instead of 35. Turned out the compressor was cycling wrong. Had to toss 60 pounds of beef cheeks and veal stock. Anybody else trust their built-in temp gauges too much?

Read a USDA study that said 25% of walk-in thermometers are off by 5 degrees or more.
