Had to pick between a $500 Japanese mandoline and just using my knife for a big beet salad order for 80 people.

I went with the mandoline and got perfectly even slices in half the time, but now I'm curious if anyone has a good trick for cleaning those tiny blades without losing a finger.

The brush that came with mine did the job for a while until I dropped it behind the fridge and never saw it again. @colesanchez is probably right about sticking with the original brush if you still have it, but I found that a soft toothbrush works in a pinch without shredding your fingers. Also learned the hard way that running it through a dishwasher with other stuff is a bad move - came out with a tiny dent in the blade that drove me nuts. That said, for 80 portions of beet salad, you made the right call. My knife skills aren't great, and I've cut myself more times trying to be fancy than just letting a mandoline do its thing.

Just use the brush it came with.

Yeah, I switched to a denser brush and it worked way better.
