Honestly, I tried that new 'deconstructed' tasting menu in Austin and I think the whole trend is just lazy plating.

Oh man, I totally get that. I used to feel the exact same way, like it was just a chef being fancy for no reason. But then I had this one dish where they put all the parts of a pot pie on the plate separately, and you got to build each bite how you wanted. It completely changed the meal for me, turning it into this fun, hands-on thing. Now I see it can be a real choice about how you want to taste things, not just lazy. That Austin one sounds like a let down though.

Oh man, that's exactly how I felt when I went to this place in Denver that did a deconstructed burger. Bun on one side, patty on a rock, all the toppings in little jars. I'm sitting there like, just give me the damn burger! But then my buddy pointed out that with the deconstructed stuff sometimes you can actually taste each ingredient better. I still think it's mostly a gimmick though. Like if I wanted to assemble my own food I'd just stay home and make a sandwich.
