Rant: My brand new circulator died mid-service last Saturday
I dropped $400 on a fancy immersion circulator three months ago and it just gave out during a 60-cover service. The thing stopped heating right before the duck breast orders hit the window. I had to finish everything in a pot on the stove like it's 2015. Has anyone else had these newer units fail way too fast or did I just get a lemon?

Honestly that sucks, but I gotta say something. Immersion circulators need to be submerged past the minimum line or theyll burn out the heating element fast. Ngl I killed my first one exactly like that because I got sloppy during a rush. Tbh those fancy ones are overengineered but theyre also super picky about water levels and circulation space. You might not have done anything wrong though, sometimes you just get a bad unit out of the box.

Gotta admit I did the exact same thing with my first circulator, thought I knew better until I smelled burning plastic and panicked. Funny how we all learn the hard way that the water level line isn't just a suggestion, it's basically a warning from future us. At least you're passing on the wisdom so someone else can skip that expensive mistake.
