Serious question, dropped a hotel pan of demi glace on the walk-in floor at 11pm
I was closing solo at a spot in Boise and slipped on a patch of grease, sending about 3 quarts of three day demi across the tile. I grabbed the flour and a squeegee before anyone else saw it, and I still have no clue how I explained the stain. Anyone got a better move for saving spilled sauce, or do you just eat the cost and start over?
Three quarts is rough, but the trick I learned after a similar 11pm disaster is to hit the spill with a wet vac first if the walk in has a floor drain nearby. Suck up what you can before it spreads, then hit the rest with a mop and hot water. Flour just makes glue, you end up scrubbing twice as long.
