That sous chef from a pop-up in Austin told me I was wasting 30 minutes on my prep order

He said I was over-portioning and doing ingredients in the wrong sequence, so I timed his way against mine the next day. Has anyone else had a total stranger completely change your workflow after one shift?

30 minutes though? That's wild. Like who even clocks someone's prep time to that degree unless they're super petty or trying to flex. I'd be mad but also kinda curious to see if his way was actually faster. Did he at least buy you a beer after he saw you timed it?

Bet on it being less about the prep order and more about him trying to prove his pop-up cred by dunking on someone else's system. I worked a stage at a place in Portland where the head chef would always knock your mise en place just to see how you handled being challenged. Bet your sous was testing if you'd blindly follow or push back, and he got way more than he bargained for.
