Chilling the slab is just one piece of the puzzle, sure, but tell that to the guy who watched his butter block turn to soup by 7am. The real trick is figuring out why your dough is warm in the first place, because a hot kitchen will beat you every single time no matter how cold your marble gets. That said, the ice sheet pan move is solid, and I would add that wiping the slab with a cold damp towel right before you slap the dough down does wonders too. Tyler's not wrong that temp control starts with the dough, but sometimes you just need to buy yourself ten minutes of working time before everything goes sideways. High humidity kitchens are their own beast, and half the battle is just accepting you will lose some days.
