Had a chat with a barista who convinced me cold brew is actually worth the hype

She said the slow extraction brings out chocolate notes you can't get from hot brewing and after trying her house blend at 48 hours I finally got what she meant - anyone else have a coffee opinion they flipped on after one conversation?

Tbh 48 hours is way too long for a cold brew, that would just make it bitter.

Had to admit, @dakotab13, you made me reconsider my whole cold brew routine. I used to let mine steep for a full 48 hours, thinking it got stronger that way. But after reading your post I tested a 24 hour batch side by side and you're right, the shorter steep was smoother and way less harsh on the finish. Now I stick closer to 20 hours and the flavors actually come through better without that bitter edge.
