Shoutout to the barista who told me to stop using tap water
For a long time, my morning cup at home tasted flat and a bit bitter, but I blamed the beans. Then a barista at my local spot asked what water I used. I switched to a basic filter pitcher, the kind you keep in the fridge. The difference in two days was wild. My usual beans suddenly had a clearer, sweeter taste, no weird aftertaste. I guess our city water here is just too hard for a good brew. Anyone else notice a big change after fixing their water?

Honestly that sounds like a bunch of extra hassle for no real reason lol. Tap water is fine, people have been making coffee with it forever. That bitter taste you had was probably just how those beans are, or maybe your machine needed cleaning. Buying special water or filters just turns a simple morning routine into some fancy project.

I saw a coffee shop owner on YouTube break down how water hardness totally changes extraction. He did a side by side test with filtered and tap, the difference in taste was wild. My tap water is super hard so my coffee used to taste off no matter the beans. Using a basic Brita filter made it way smoother, not fancy at all. It's not about being extra, some water just has minerals that fight with the coffee oils.

I grew up in a city where the tap water was basically liquid rock, and even back then I could tell my coffee tasted different when I visited my grandma who had a well. A cheap 20 dollar filter pitcher changed my mornings completely, not just for coffee but even for tea. I get why someone might think it's extra, but the minerals in hard water literally bind to the coffee grounds and mess with extraction. It's not about being fancy, it's about the chemistry of what's already in your cup before you even pour.
