Visited a roastery in Portland and saw something odd about their pour-over setup

I was at this place called Push X Pull last weekend (great name, right?) and noticed they were using those cheap Hario V60 plastic drippers instead of the fancy ceramic ones everyone seems to love. The barista said they tested both and the plastic ones actually hold heat better for their recipe, like a full 8 degrees warmer during the pour. Has anyone else tried the plastic vs ceramic thing and noticed a difference?

I mean, that 8 degree difference is actually pretty wild if you think about it, since even a few degrees can change extraction. Did they mention if they adjusted their grind size or pour speed at all to account for the plastic staying hotter longer, or did they just swap drippers and keep everything else the same? That would be the real test of whether the material actually matters versus just the heat retention.
