Hated meal prepping for years but now I'm a convert after one trick
I used to spend 3 hours every Sunday cooking chicken and rice and it tasted like cardboard by Wednesday. Then my buddy in Austin told me to just cook 3 days at a time instead of a full week. Now I do Sunday and Wednesday, takes 45 mins each, and the food actually tastes fresh. Anyone else stick to a strict meal prep schedule or just wing it?}

Totally feel you on that frozen broccoli disaster, happened to me with spinach once and it was a whole sad slimy mess. Fresh veggies on prep day is a good call, I might steal that idea.

Oh man the 3 day thing is such a game changer. I started doing that too but I messed up last week because I bought a huge bag of frozen broccoli and it thawed in my car on the way home from the store and turned into mushy grossness. Now I just buy fresh veggies on the days I prep and cook them same day so they don't get that sad texture.
