Heard a barista explain pour over coffee pH levels and it clicked
So I was at a cafe in Portland yesterday and overheard this barista telling a customer that coffee's acidity changes as it cools below 140 degrees. I never thought about why my coffee tastes different after sitting for 10 minutes. Tested it with a cheap thermometer at home this morning and wow, the flavor really does shift. Anyone else notice their coffee tastes totally different at different temperatures?

Who measured that and decided it was the magic number" is exactly the kind of thing that makes me wonder about a lot of everyday stuff, like how we all just accept that 72 degrees is the perfect room temp or that 350 is the go-to baking temp. It feels like someone somewhere just ran a test once, said "yeah, this works," and the number stuck forever without anyone questioning it. I bet a lot of those random numbers we follow are just from some old experiment that nobody bothered to double check.
