Went from a rat's nest of cables to a single cable sleeve in 6 months
Honestly, my desk used to look like a spaghetti monster threw up on it, but after buying a $12 cable sleeve and some zip ties, it's night and day. Anyone else notice how much cleaner your brain feels when the wires are hidden?

You said your brain feels cleaner when the wires are hidden, and I get that feeling, but I have to gently push back a little. A cable sleeve and zip ties are great for tidying up, but they don't actually hide anything. The wires are still there, you just wrapped them up. If you really want that "clean brain" feeling, you need to route the cables behind the desk or through a grommet so they're completely out of sight. I used a cheap adhesive cable raceway along the back edge of my desk and it made a way bigger difference than just bundling them together. The sleeve is a good first step, but you're not done yet if you want that truly clean look.
