Mud started bubbling on a skim coat in Phoenix and I panicked

Last month I was doing a whole living room skim coat near 35th Ave and the hot mix started bubbling about 40 minutes in, so I scraped it flat and let it dry before going again. Has anyone else had this happen with quick-set in summer heat, or is my mud ratio just off?
