Took me 3 tries to get the mud consistency right on a ceiling patch

I was working on a small ceiling patch in a hallway last Friday. Mixed the mud too thin the first time, too thick the second. By the third batch I finally got it where it wouldn't sag but still spread smooth. Whole thing that should have taken 30 minutes ate up almost 2 hours. Anyone else have a simple job turn into a headache over something basic like that?

Watched a Youtube video once where a guy said "just add water until it feels right." Real helpful, thanks. Ended up with three bowls of ceiling mud sitting on my counter like some kind of drywall chemistry experiment. The worst part is when you finally get it perfect and then realize you've been staring at it for twenty minutes and now it's starting to dry out.
