The key is getting your pan hot enough that the oil shimmers before you add anything... I learned that the hard way with a few sad, soggy stir fries. Prepping all your veggies and sauce beforehand makes the whole thing go so much faster, too. It's basically the only way I get dinner on the table after work without ordering pizza.

Funny enough, I used to be one of those people who thought stir fry was way too much work (like, chop everything, stand there, clean up a huge mess). But then I actually tried it with a screaming hot pan and all my stuff prepped in little bowls, and holy cow, it's honestly faster than boiling pasta. The thing that really sold me was that 15 minute promise, because I have zero patience for cooking after a long day. Now I'm the one telling all my friends to just get a heavy pan and crank the heat, it makes such a difference.
