Can we talk about the advice to always cook chicken breasts on high heat?

My buddy Mike who used to work in a steakhouse told me to blast chicken breasts at 450F for 15 minutes and I ruined three dinners in a row before I realized his advice only works for thin cutlets, not the thick grocery store ones I get, so what temperature actually works for those chunky Costco packs?

Baking at 375F till internal temp hits 160F changed my mind completely.

But does that actually get the skin crispy though? I doubt it.
