DAE finally admit the slow cooker is cheating on weeknights? I stopped pretending it wasn't
I used to think dumping stuff in a Crockpot and walking away was somehow not real cooking, like I was quitting on dinner before I even started. Then two Mondays ago I got home at 6:40 after a full day of cleaning three houses across Tacoma, and my kid had soccer at 7:15, and I had nothing. So I threw a pound of chicken thighs, a jar of salsa, and a can of black beans in there at 7am that morning, and we walked in to actual food. I shredded it with two forks, put it on tortillas with cheese, and we ate in nine minutes flat. Here is the part that bugs me: it tasted better than the version I used to babysit on the stove for 40 minutes. Something about the thighs breaking down all day instead of getting tough. Now I do it twice a week and I am not sorry about it, even when people online say it is lazy. My question is, what is the one thing you refuse to make any other way on a busy night? I need more of these.
The slow cooker is cheating on weeknights" is a funny way to put it since the thing is basically doing your job while you clean other people's houses. My wife called it the countertop babysitter and I stopped arguing after the first pot roast. The one thing I will not make any other way now is pulled pork. Throw a shoulder in with some garlic, onion, and a bottle of cheap root beer, come home eight hours later and it falls apart with a spoon. Brown sugar and a little hot sauce at the end and nobody at my table knows the difference. If that makes me lazy then fine, I am lazy and fed.
