I gave up on chopping onions for my Tuesday tacos and found a better way
My eyes would water so bad it added like 10 minutes to the whole process. Now I just buy the pre-diced frozen onions from the store, dump a handful straight into the pan, and they cook up fine. What other veggie shortcuts do you guys use when you're really in a rush?

Yeah, the frozen onion trick is a lifesaver. I keep a bag of the frozen pepper and onion mix for fajitas, it skips all the chopping.

That frozen pepper and onion mix @gonzalez.wesley mentioned is the best. I basically live off frozen spinach. I just grab a chunk from the bag, throw it in a pan with some garlic, and it wilts down into pasta or eggs in like two minutes. No washing, no chopping, no weird slimy leaves in the fridge a week later.
