Just learned the hard way about pre-made vs. fresh spice blends for my go-to stir fry.
Used a jarred 'Asian blend' from the pantry last night and the whole dish tasted flat and salty compared to when I mix my own garlic powder, ginger, and a pinch of red pepper flakes. Has anyone else found a simple homemade mix that works better?

Watched my neighbor make that exact mistake with a store-bought taco seasoning. His whole family complained the meat tasted like salty cardboard. He switched to just chili powder, cumin, and a little oregano from his cupboard, and now he won't go back. Those pre-mixed jars always seem to load up on salt and leave the actual flavor behind.

But what about people who just need a quick dinner after work? The pre-mixed stuff is fine in a pinch and saves you from measuring five different spices.

My old roommate used to work at a spice factory and told me the pre-made blends sit on shelves for months before they even get to stores. The volatile oils in things like ginger and garlic fade fast, so fresh ground always hits harder. That flat taste is just old ingredients, not your cooking.
