Last Tuesday I messed up my stir fry three times before getting it right

I was rushing after a long day at my job in Portland and tried to make a quick chicken stir fry. First batch I burned the garlic because the pan was too hot. Second try I added the sauce too early and it turned into a soggy mess. Third time I finally figured out to cook the chicken first, take it out, then do the veggies in batches. Does anyone else have a go-to quick dinner that you always mess up the first time?

My buddy Mark had the exact same problem with his stir fry routine a couple years back. He was trying to impress this new girl he was dating and burned the garlic so bad the whole kitchen filled with smoke. Then the second time he rushed and dumped everything in the wok at once, ended up with this gray, watery mess. Third time he actually called his mom for tips and she told him to use a really hot pan but keep moving the food around. He still jokes that the fourth attempt was the charm because by then the girl was just laughing at his kitchen disasters.
