My friend told me I was overcomplicating taco night and she was right

I used to spend like 45 minutes on tacos - marinating meat, toasting tortillas, making three salsas from scratch. Last month my buddy Sarah just laughed and said dude it's a tuesday, nobody cares about your microgreens. I took it as a challenge and now I throw ground beef in a skillet with a packet of Ortega seasoning, chop some iceberg lettuce, and open a can of black beans. Takes maybe 15 minutes total and honestly my kids eat it way faster than my fancy version. She also said to ditch the homemade crema and just use sour cream. What other shortcuts have you all found that actually taste fine but save a ton of time? I'm thinking of trying the same approach with stir fry nights.

A buddy of mine tried that shortcut thing with enchiladas and it totally backfired on him.

Used to think shortcuts were fine too, but @jasons63 this totally changed my view on cutting corners in cooking. You really do gotta follow the whole process or it just falls apart.
