My neighbor saw me struggling with dinner prep and gave me a tip that changed my game

I was in my kitchen in Denver last Tuesday, trying to chop veggies for a stir fry while my kids were yelling. My neighbor, an older guy named Frank, was walking his dog and saw me through the window. He knocked and said, "You know, I just cook a whole pack of chicken on Sunday and use it all week." I started doing that, and it saves me at least 30 minutes on busy nights. Has anyone else tried this kind of batch cooking for weeknights?

What if you change them up a bit? I find leftovers get better by Wednesday because the flavors have more time to mix. A simple stir fry or soup made from the original meal feels like a whole new dinner. It just takes a little extra effort to keep things from getting boring.
