My sister's Tuesday night rule at her place in Boise changed how I cook chicken
I was at my sister's house in Boise last month and she had a whole chicken in the oven by 6:15 with almost no effort. She just puts thighs on a sheet pan with whatever veggies are in the fridge and lets it go for 40 minutes while she deals with her kids. I started doing the same on Mondays and it covers dinner plus lunch the next day, anyone else have a go-to sheet pan combo that actually works?
Learned the same thing from a roommate in college who would roast a whole bag of carrots and onions under his chicken and then eat the cold leftovers straight from the pan the next morning. It rubbed off on me because the veggies soak up all the fat and end up better than the meat some nights. Toss in a can of chickpeas for the last fifteen minutes and you get a little crunch plus enough food that nobody asks what is for lunch.
