My trusty rice cooker gave up the ghost last Tuesday
I was halfway through making a simple chicken and rice bowl when it just stopped heating. The pot was full of half-cooked rice and raw chicken, which was a real problem at 7 PM. I had to dump it all into a big skillet and finish it on the stove, which took twice as long. Anyone have a good, simple one-pot skillet recipe that doesn't rely on a rice cooker?

That "half-cooked rice and raw chicken" situation is my nightmare. Honestly, I skip the one-pot skillet and just cook the rice and protein totally separate. Pan fry some chicken thighs, then use the same pan to quickly saute veggies in the drippings. Microwave a pouch of ready rice. Takes the same time, but zero risk of undercooked chicken or mushy rice. Way less stressful.

Oh man, that's the worst kind of dinner surprise. I totally feel your pain, scrambling to save a meal like that. @stella904 has a really good point about keeping things separate to avoid the stress. My go-to skillet fix is just browning some sausage, then throwing in chopped bell peppers and onion. Once those are soft, I stir in a can of drained beans and a jar of salsa to heat through. It's stupid easy and everything cooks at the same rate.
