My wife said my 45 minute chili was just spicy ketchup water and I've been making it wrong for 3 years
I used to dump a can of diced tomatoes, a can of beans, and a pile of chili powder into a pot and call it dinner on Tuesdays. My wife finally said it tasted like spicy ketchup water, which stung but was fair. So last week I tried cooking the onions down for 10 minutes first, then adding tomato paste and letting it darken for a couple minutes before anything wet went in. Same 35 minutes total, same cheap canned stuff, but the pot came out thick and sweet instead of watery. I also started adding a splash of cider vinegar at the end, which sounds like nonsense but fixed the flat taste. Anyone else have a shortcut dinner that needed one dumb extra step to stop being sad?
