Overheard a mom at the park say she chops bell peppers on Sunday and freezes them flat in bags

I was at the playground last Tuesday and this mom told her friend she does this every weekend. She buys a big bag of bell peppers, dices them up, then lays the bags flat in the freezer so they don't clump. She said it saves her 10 minutes every night just for stir fries and tacos. I tried it this week and honestly it's a game changer for quick dinners. Has anyone else done this with other veggies like onions or mushrooms?

Yeah I read something about this a while back actually. Some food blogger did a test and said frozen peppers lose a bit of crunch but the flavor holds up fine for cooking. I've been doing it with diced onions for a few months now. Just chop a whole bag on Sunday, spread them flat on a baking sheet to freeze individually, then dump them in a ziplock. No clumps that way. Works good for mushrooms too but they get a little watery when thawed so only use them in soups or sauces.
