Overheard a mom talking about meal prepping breakfast burritos for the whole week...
She said she makes 12 at a time and freezes them, then just microwaves one on busy nights. I never thought to do that for dinner too, just breakfast. Anyone tried that with something like black bean and cheese burritos for a quick dinner?

Oh man black bean and cheese burritos are perfect for this. I mess up the first time too - didn't wrap them tight enough and they got all soggy in the freezer. Now I make a batch of like 8 bean and rice burritos every Sunday and they're a lifesaver when I get home late from work. Just microwave for like 2 minutes and they're solid. I also add some salsa and sour cream on top after heating and it feels like a real meal. The key is letting the filling cool completely before wrapping or else the tortilla gets that weird steamed texture.
