Picked the 15 minute skillet beans over grabbing a frozen pizza at Kroger and my Tuesday turned out way better
Last Tuesday I got home at 6:30 and stood in the kitchen staring at two choices: heat up a frozen pizza or try a white bean and spinach skillet thing I saw online. I went with the skillet because I had a can of beans and half a bag of spinach already sitting in the fridge. It came together in about 12 minutes with garlic, olive oil, and a squeeze of lemon, and my 8 year old actually asked for seconds. The pizza would have been fine but this felt like a real dinner for basically the same effort. What's your go to when you're too wiped to think but still want something that isn't from a box?
