TIL frozen ginger and garlic pastes actually save me 15 minutes on weeknights

I used to always chop fresh ginger and garlic from whole roots for stir fries. But after burning dinner twice last week because I was rushing, I bought a tube of garlic paste and a jar of ginger paste at Aldi for like $3 each. Honestly, they taste close enough for a Tuesday night. Has anyone else tried this shortcut and found it works or do you think fresh is still the only way to go?

Wait, you put tube garlic in a stir fry? Doesn't it get all weird and watery in the hot pan?

My buddy Jared tried tube garlic in a stir fry once and ended up with goopy grey sludge all over his chicken. He tossed the whole thing and ordered pizza instead.
