Used to agree with @the_ray about the cleanup. Lining the pan with foil changed the game for me. Now it's just toss and go.

Sheet pan meals actually create more cleanup for me with all that baked-on grease. Everything ends up tasting the same after roasting together anyway. The hype feels kinda lazy compared to just making a simple stir fry.

My kitchen still has PTSD from that sheet pan salmon incident last week. @the_ray gets it, the baked-on grease is like edible glue on everything. Give me a wok any day for actually tasting different ingredients.
