Update: My go-to pasta dish failed me last Tuesday
Had the sauce simmering for 20 minutes, then realized I was out of the canned tomatoes I always use. Ended up ordering pizza, which cost $32. Anyone have a reliable pantry-only recipe for nights like that?

Never been a fan of aglio olio myself, feels like eating flavored air. What about a simple mushroom carbonara with shelf-stable stuff? Dried mushrooms rehydrate in the hot pasta water, then you just need eggs, parmesan (or that powdered stuff in a can), and some bacon bits from a jar. Comes together in the time it takes to boil water, and tastes way heartier than plain garlic and oil. The dried mushrooms give it that deep savory flavor that makes you forget you're missing fresh ingredients.
