Discovered a trick to stop my pie crust from shrinking in the pan

I started letting the dough rest in the fridge for a full 30 minutes before rolling, and it hasn't pulled down on me once in the last three batches of apple pie I made for our family dinner.

The resting part helps but I found chilling it even longer works better.
