Grandma's cornbread recipe flopped for 8 years before I caught the mistake
I was at my kitchen counter last Saturday, pulling another batch of dry, crumbly cornbread out of the oven. My grandma swore by her recipe, but mine never came out right. Then I noticed the bag of cornmeal said "self-rising" on it, same as hers, but I had been using plain cornmeal all along. I swapped it out, added a teaspoon of baking powder, and the next pan came out fluffy and golden. Has anyone else had a recipe fail because you missed one tiny ingredient on the label?

Wait, you mean you used plain cornmeal for eight years without ever reading the bag?

Gotta disagree a little here. It's actually pretty easy to grab the wrong bag when you're in a hurry at the store. I've done something similar with flour before - bought all-purpose instead of bread flour and wondered why my rolls came out like hockey pucks. The labels look almost identical when you're tired and just grabbing what you think you need. Plus if your grandma always used self-rising, you'd assume that's the standard cornmeal. So no, I don't blame her for not catching it sooner.
