Rant: I've been ruining my grandma's potato salad for 10 years
Last weekend at my aunt's house in Phoenix, I saw her making potato salad and she boiled the potatoes with the skins on. I've been peeling them first every single time because that's what I thought you did. She just laughed and said the skins hold the flavor and keep them from getting mushy. Has anyone else had that moment where you find out a basic step you were skipping is the whole secret?

Wait, did she say anything about how long she boils them with the skins on versus how long you'd boil peeled potatoes? Because that's the part I'm stuck on. I tried the skin-on method once after hearing about it, but I used the same 20 minute boil time and they still came out kinda mushy on the outside. I'm wondering if the skins act like a barrier that buys you extra time before they start falling apart.

Ha, isn't it funny how everyone's potato game is different? @jason_stone I swear I boil mine for like 30 minutes with the skins on and they still come out fine, but my mom does 15 and hers are perfect. Go figure.
