Rant: Overheard a baker at the farmers market say you don't need to rest pie dough

She told a customer that chilling the dough for 10 minutes is plenty and I nearly dropped my basket of apples, because Ive been resting mine for at least 2 hours for 15 years and now I wonder if I've been overworking my crusts this whole time, has anyone else heard this shortcut and tried it?

Does that baker even realize resting dough is what keeps it from shrinking into a hockey puck in the oven?

Hockey puck in the oven" made me snort. Dude probably thinks resting dough means taking a nap on the counter while it sits there.
