My buddy Jake told me I was over-sanitizing my jars, and I fought him on it for months
He said the vinegar rinse was killing the good bacteria too and showed me a side-by-side batch where his kraut came out way more active. I cut way back on the sanitizer and my ferments have been noticeably faster ever since. Anyone else find that less sterilization actually helps?

Man, that's wild you mention that! I had a buddy who used to boil his jars for like 20 minutes before every batch and still had mold issues. I finally talked him into just washing them with hot soapy water and a good rinse, and he hasn't had a problem since. I swear sometimes we overthink this stuff, the good bacteria is tough enough to handle a little competition from the wild stuff if you give it the right conditions.
