My uncle told me to skip the airlock for my first batch of sauerkraut

He said just a loose lid was fine, but after two weeks my whole kitchen smelled like a swamp. I lost five pounds of cabbage because I didn't trust the basic gear. Has anyone else had a family tip go this wrong?

My grandpa swore by the loose lid method too... ended up with a science project in my pantry.

Honestly, my grandma always used a plate and a weight with great results. It just needs to keep everything under the brine.
