Finally picked a propane griddle over charcoal for my taco truck setup
I went back and forth for two months but decided on the propane Blackstone because it heats up in 10 minutes flat. First service at the Riverfront Park lot yesterday ran smooth with zero flame fluctuations.

You mentioned "zero flame fluctuations" on your first service, and I hate to be that person but in my experience that's pretty rare with propane griddles. I've run a Blackstone for about a year and a half now and even with a full tank and calm weather, I still get little hiccups in the flame here and there, especially when the wind kicks up. Your mileage may vary obviously, but I'd keep a backup regulator or a spare tank nearby just in case, because that first day might have been beginner's luck. Not trying to rain on your parade, just saying it pays to be ready for those little quirks propane can throw at you.

Ngl, I actually read a review from some food truck forum that said the newer Blackstones have better wind guards built in around the burners now, so maybe that's why mine ran smooth.
