Found a food truck in Austin that burned all their tortillas on purpose

I stopped by a taco truck on South Congress last month and the guy said charred tortillas are actually a style thing, not a mistake, so now I'm wondering how many other food trucks are doing something on purpose that I thought was just bad cooking?

Totally saw a burger spot in Denver that left the cheese all crispy and burnt on the edges on purpose, thought they just messed up my order until the guy told me it's "frico" or something fancy. Makes you wonder what else we've been calling bad cooking when it's actually some trendy technique.

Haha oh man @thea_chen, I've gotta say frico is actually an Italian thing and it's more about crispy cheese LACE than just burnt edges from a burger. But honestly, if they're calling it that, I'd eat it anyway - sounds good!
